Lark Masterclass at The Whisky Library

On October 21 at 7:00 PM, the bar presents a guided masterclass featuring three single malts that express the distillery’s approach to cask maturation, local peat, and unconventional finishing. A Davidoff cigar pairing adds another dimension to the evening.

Established in 1992, LARK emerged from the belief that Tasmania possessed the natural resources to produce world-class single malt whisky. Its house style draws from Tasmanian barley, pure local water, fortified wine casks, and peat sourced from the island.

Ian James Osillo, Business Development Manager for Emerging Brands at Booze Online Inc., and spirits educator and Davidoff Cigar Brand Ambassador Kris Ong will lead the tasting. Classic Cask introduces the LARK house style through citrus, butterscotch, and plum pudding, followed by a trace of Tasmanian peat. The Tasmanian Malt & Foie Gras pairing accompanies it with a baked foie gras tart, Peking duck floss, spiced orchard chutney, and cauliflower cream.

Tasmanian Peated explores the island’s smoky character through a post-malt smoking process that brings forward chocolate and earthy roasted coffee notes. Its Peated Surf & Turf pairing combines seared Australian wagyu with an oyster frit, beets, morel mushrooms, and sticky beef glaze. A Davidoff cigar further draws out the expression’s smoky character.

Chinotto Citrus Cask takes the experience in a brighter direction. Finished in casks seasoned with chinotto citrus, the single malt develops notes of candied citrus peel, cola, buttery malt, and orange custard with cinnamon. Noir & Citrus closes the pairing progression with dark chocolate, bitter orange, Madagascar vanilla, and hazelnut. A Compass Box welcome drink begins the evening before guests explore the three featured expressions.
